White Chocolate Rasberry Cheesecake Recipe!

 White Chocolate Raspberry Cheesecake Recipe
Serves 12
Crust:
1 1/2 Cups flour (i used rice flour but any other flour would work!)
1/2 cup butter softened
1 egg
1/3 cup coconut crystals
Combine Ingredients and put in 9 in. spring form pan prick all over with a fork and bake for 15 minutes at 400'
 Filling:
3 packages cream cheese
3/4 cup honey (or coconut crystals)
1/3 cup sour cream
3 Tbls.rice flour
1tsp. vanilla
3 eggs lightly beaten
10 oz. white chocolate chips
1/4 cup seedless raspberry jam
 
In a large bowl, beat cream cheese and sugar until smooth.Beat in sour cream, flour and vanilla. Add eggs, beat on low speed just until combined.Fold in chips. Pour over crust. In a sauce pan melt jam stir until smooth. Drop by teaspoonful's over batter; Cut through batter with knife to swirl but be careful the jam doesn't harden before you swirl it!
 Bake at 325' for 80 minutes or until center is just set cool on wire rack for 10 minutes carefully run a knife around edge of pan to loosen it cover and refrigerate overnight!
Top with whipped cream and fresh raspberry!
