Gluten Free Brownie Cupcakes!
Makes 17 cupcakes
Beat together:
4 eggs
2 cups honey
Melt then cool:
1 cup butter (2 sticks)
4 oz. unsweetened chocolate squares
Add to chocolate mixture into egg mixture and beat well stirring fast so the egg won't cook!
Mix in:
1 1/2 cups Flour (I used rice flour but you could also use any other gluten free flour)
Mix in:
6 oz. Chocolate chips
Pour in to cupcake liners and bake at 325 for 30-40 minutes checking with toothpick!
Ice with your favorite chocolate icing or plain!
They also taste good with whipped cream or ice cream!
