Congo Bar Recipe!

This recipe is a favorite at our house! "Chewy chocolate deliciousness"

Congo Bars
 2/3 c butter (melted)
1 lb coconut crystals
3 eggs
1 tsp vanilla
2 3/4 c flour (i used 1 and 3/4 cup rice flour and 1 c millet but you could use any gluten free flour mix)
2 1/2 tsp. baking powder
1/2 tsp. salt
12 oz  chocolate chips
If you like nuts you can put in1 cup coarsely chopped nuts

 Grease a 9 x 13 pan.
 In a large bowl combine melted butter and coconut crystals...
 ...add eggs one at a time beating after each addition
 Beat in vanilla
 In a medium bowl combine flour...
 ...
...baking powder...
 ...and salt!

 Add to wet ingredients...
... and beat thoroughly.
 Stir in chocolate chips
 pour into pan...
 And put it in the oven!

Bake at 350 for 25 minutes till knife comes out clean!
 Then time to clean up!
